The Cape Francolin 2015, a classic Bordeaux blend, consists of all five noble grape varieties. It is a garnet-rouge colour, very dense, with dark berries and aromatic notes of warm spice on the nose. Ripe and concentrated cassis and dark chocolate flavours line the palate while firm tannins and a harmonious acidity delivers a long and rewarding finish. The Cape Francolin is medium to full bodied with great depth and balance - the perfect winter wine!
The 2015 harvest will go down in history as one of South Africa's best. Surely, it was one of the driest and earliest in many years but with a somewhat smaller wine grape harvest, promising exceptional wines. Smaller berry sizes and moderate harvest temperatures lead to a low pH, higher acidity and excellent flavour spectrum.
Sourced from one property between Paarl and Franschoek, cultivars were harvested separately at their individual optimal ripeness. Grapes were hand-picked and fermented in stainless steel tanks for 3-4 weeks with regular pump overs to facilitate colour and flavour extraction. The wine was matured in 225L French oak barrels (30% new wood) for 18 months.
Grape Varieties: 28% Cabernet Sauvignon, 22% Malbec, 22% Merlot, 18% Petit Verdot and 17% Cabernet Franc.
Analysis: 14% Alcohol, 2.3g/l RS, 6g/l TA, 3.57 pH
Pairing Suggestion: The Cape Francolin 2015 is the perfect partner to braised beef dishes like oxtail, but also with char-grilled Rump steak or braai-ed lamb chops.
