New Release: Barony August Cabernet Sauvignon 2016

 

Our latest release is sure to be a popular one, judging by the popularity of its predecessor, Barony August 2014, that sold out after its release last year.

The colour of this Cabernet Sauvignon is a dark garnet-rouge. The nose shows fragrant cassis, dried herb and cocoa aromas that develop into bright and vibrant red berried fruits on the palate. The wine is elegant but has great depth with juicy tannins and a fresh acidity that contributed to its length and concentration.

The vineyard is located on the slopes of the Helderberg mountain outside Stellenbosch at an altitude of approximately 340 m above sea level. The soil consist of weathered granite and is rich in clay. The maritime climate ensures warm sunny days that are cooled down by ocean breezes during the late afternoons. These cooler temperatures curb the natural vigour of the wines making the typical varietal flavours more concentrated and the ripening period longer. Average rainfall is 700-800mm per annum.

Challenging conditions led to a reduced wine grape crop for us in 2016. Water supplies had the greatest impact on the harvest this year, especially in dry-land blocks where vineyards were not buffered against the heat. The weather was very warm, especially from the end of October towards the end of January, which restricted the growth. On the positive side, these dry conditions led to the vineyards and grapes being very healthy overall. Slower growth also brought about the formation of smaller berries and lower bunch masses, contributing to more concentration and flavour in the wine.

The grapes were harvested, destemmed and cold soaked for 48 hours before fermentation commenced. This process followed in stainless steel red wine fermenters for approximately 10 days. An extra 7 days post fermentation maceration treatment commenced and malolactic fermentation was completed in the tank before pressing commenced. The wine was moved into 2nd and 3rd fill French 225L barrels for 12 months.

This Cabernet will pair well with rich and hearty cuisine. Try pairing with Beef Bourgogne , chargrilled steak or try with a strong flavoured cheese like matured Cheddar.
