New Release: Reserve Blue Mountain Bordeaux Blend 2016

The Reserve Blue Mountain 2016 has a deep dark hue. Whafts of ripe blackcurrant infused with roasted coffee beans and tobacco leaves line the nose. The palate is rich and densely fruited showing black plum and hints of dark chocolate. The wine has great structure and balance and concludes in a long tapered finish.

Vineyard

The grapes are from a single property on the outskirts of the Bottelary wine growing region in Stellenbosch.  The vineyards are south and south-west facing and enjoys protection against the afternoon summer heat by its proximity to the Bottelary Hills.  The cool air moving in from False Bay in the evening also contributes to the cooling effect.  Altitude:  200-300m Annual Rainfall:  350mm - 400mm

Winemaking

All 4 cultivars were vinified separately.  The grapes were picked cold in the early mornings between 24˚ and 26 º Balling sugar ripeness. The bunches were de-stemmed, gently crushed and went into tanks for 2 to 3 days. Fermentation on the skins peaked between 30˚ and 32 º Celsius and lasted from 7 to 10 days. The healthy grapes enabled a long post-fermentation of 25 to 30 days. After pressing the wine was pumped into 225L French Oak barrels where malolactic fermentation took place. A mix of  1st to 3rd fill barrels were used ensuring mild wood integration. The wines were aged for 18 months and blended before bottling.

Serving Suggestion:  Best served with Sunday Roasted Lamb.  Grilled Rib-eye steak with a decadent gorgonzola or wild mushroom sauce.
