COLOUR:
Bright ruby with a dark core.
APPELLATION:
Wellington - The grapes were sourced from a selection of different properties in the Wellington district of the Western Cape. The area is renowned for its warm climate and fertile soils. The various terroirs of these vineyards lend different traits to the final blend elevating its complexity.
WINEMAKING:
The grapes were sourced from premium vineyards and harvested early-February. After the grapes were crushed a 12 hour cold soaking period followed. Colour and aroma extraction was done applying 3 aerated pump-overs per day. Fermentation lasted five days and the grapes were pressed before alcoholic fermentation was 100% complete. This ensures that less rough tannins were extracted making the wine ‘softer’ for earlier consumption. The wine underwent 100% malolactic fermentation in stainless steel tanks, done in combination with dark toasted French oak for 6 months.
ON THE NOSE:
Cacao dust, blueberries, roasted espresso beans.
ON THE PALATE:
Charred plums, dark cherry, sweet spice.
FINISH:
The wine is luscious and juicy with good structure and ripe tannins.
PAIRING IDEAS:
Serve with a traditional venison pie, barbequed pork ribs or decadent dark chocolate desserts.
