APPELLATION:
The grapes were sourced from a property on the outskirts of Paarl along the foothills of the majestic Simonsberg Mountain. The temperate Mediterranean climate is excellent for growing quality grapes and the farm receives plenty of sweet natural water that runs down the slopes of the mountain. All of the vines are trellised and planted on a variety of slopes and soils ranging from decomposed granite to sand soil.
WINEMAKING:
The 3 cultivars were harvested separately. The grapes were destemmed, lightly crushed and moved to open stainless steel fermentation tanks. The must was inoculated with commercial yeasts. Flavour and colour development was achieved by regular pump-overs and punch downs every 4 hours. After primary alcoholic fermentation the wines underwent malolactic fermentation followed by 18 months ageing in 20% new and the remainder second-fill French oak barrels to produce supple, rounded tannins. A well structured and balanced blend.
ON THE NOSE:
Layers of red fruits, ripe plums and black currants.
ON THE PALATE:
Smooth entry, deliciously plush with cherry and raspberry dominating the palate. Cedar tones and spicy nuances round off the finish.
FINISH:
Round and generous.

Roasted Lamb, Seared Rib Eye steak or try with rich beef stews.
