WINE STYLE: 

Full Bodied Natural Red Wine - Oaked for 18 months

VARIETAL COMPOSITION: 

38% Cabernet Sauvignon, 28% Merlot, 20% Petit Verdot, 14% Cabernet Franc

COLOUR:  

Dark crimson with a brick red rim.

APPELLATION: 

The grapes were sourced from vineyards at the foothills of Simonsberg Mountain in Stellenbosch.  The soil can be described as decomposed granite that facilitates good drainage and allows lazy vine roots to flourish. A yield of 6 tons per hectare ensured that the wine had concentrated flavours and deep colour.

WINEMAKING:

The grape varieties of this blend were all harvested and vinified separately.  The bunches were picked by hand, destemmed and lightly crushed into stainless steel tanks.  Natural fermentation commenced at regulated temperatures and wine was pumped over 3 times daily.  The dry wine was left on the skins for an additional 3 weeks after fermentation was completed.  After the wine was pressed, it was matured in French oak barrels for 18 months before the final selection and blending took place

ON THE NOSE:

Juicy plum, cassis and aromatic tea leaf.

ON THE PALATE:

Grippy and tight with plenty of spice and red fruit flavours.   Impressive entry, delicious and bold with cherry and mulberry dominating the palate followed by a hint of dried herbs.

FINISH:  

Rich and voluminous with ample supporting tannins.

PAIRING IDEAS:

Bistro inspired fare like steak and béarnaise sauce, coq au vin or cassoulet.
