Our latest release, the 2019 Barony August Cabernet Sauvignon is an excellent representation of the calibre of wines that Rosendal offers. With previous vintages proving wildly popular, selling out after their release, this vintage would be no different.
As with most premium Cabernet Sauvignon wines, the August offers intense aromas, robust tannins, and a lingering finish. It over-delivers on all aspects that make a red wine an excellent one.
On the palate, you can expect powerful aromas of cassis and blackberry fruits, accompanied by nuances of cedar spice and cocoa dust. On the palate, the aromas follow through, with a powerful structure and richness that fills your mouth. The balance is exquisite, and the wine progresses to a complex finish.
The vineyard site of this Cabernet is on a single property on the outskirts of Bottelary, Stellenbosch.
With the winemaking process, the winemaker did everything to preserve the natural elements of the robust variety. After the grapes were destemmed and crushed, they were fermented in open steel tanks. To extract all the color and flavour of the berries, regular pump-over and punch-downs were done every 4 hours.
After the fermentation was complete, the wine underwent Malolactic Fermentation and spent 18 months of ageing in 30% new French oak barrels and 70% second-fill French oak barrels. This Cabernet Sauvignon can be aged for up to 10 years.
This Cabernet will pair well with rich and hearty cuisine. Try pairing with Beef Bourgogne, chargrilled steak, or try with a strongly flavoured cheese like Matured Cheddar.
