APPELLATION:
The grapes were sourced from a property on the outskirts of Paarl along the foothills of the majestic Simonsberg Mountain.
The temperate Mediterranean climate is excellent for growing quality grapes and the farm receives plenty of sweet natural
water that runs down the slopes of the mountain. All of the vines are trellised and planted on a variety of slopes and soils
ranging from decomposed granite to sand soil.
WINEMAKING:
The 2 cultivars were harvested separately. The grapes were destemmed, lightly crushed and moved to open-top stainless
steel fermentation tanks. The must was inoculated with commercial yeasts. Flavour and colour development was achieved by
regular pump-overs and punch downs every 4 hours. After primary alcoholic fermentation the wines underwent malolactic
fermentation followed by 18 months aging in 10% new and the remainder second-, third-, and forth-fill French oak barrels to
produce supple, rounded tannins.
ON THE NOSE:
Layers of dark stone fruit, violets, white pepper spice.
ON THE PALATE:
Lush red berries, hints of caramel toffee, tart black cherries.
FINISH:
Fresh acidity and silky tannins.
PAIRING IDEAS:
Herb Crusted Lamb Chops, Cured Meats and Goats Cheese or try with old fashioned Venison Pie.
